A PERSONAL STORY

3 years in the making and we finally developed a mooncake that we are proud to be associated with.

Our team of Empire Artisans brainstormed for over 3 years on what makes an ultimate mooncake. We have tasted more than 100 different versions from different countries and asked ourselves earnestly, what makes a good mooncake.

The Mid-Autumn festival is more than mooncakes. It is all about family reunion and love. It is an opportunity to share your precious time with the people who matter most to you.

Building around this understanding of love and fellowship that surrounds this festive season, we narrowed down to being critical about the ingredients we use by re-creating what a good mooncake should have been.

We all like the finest things in life for our loved ones. We try to push the envelope in mooncake artistry by sharing with you what ingredients goes into making your mooncake. No secret recipe. Just plain, old fashioned sharing.

In broad terms, in each of the product ranges, we use the finest ingredients such as :

(We have tried to source a better grade but were told that few dared to venture using this superior quality lotus seeds for a mooncake.)

For the Empire snowskin mooncake, the heart of mooncakes lies the world’s best chocolate truffle that is made with Chuao Criollo 75% Cocoa.

 

Empire Chuao Criollo is one of the world's rarest and best single-origin chocolate in the world with 75% cocoa content.

 

Criollo beans feature in only 5% of the world's cocoa production. This is the rarest and most sought after bean, due to its fragile nature and relatively difficult cultivation.

 

Chuao is an ancient variety of Criollo cacao which takes its name from the plantation and the Venezuelan peninsula where the seeds were born and subsequently selected throughout the centuries. The beans are completely white and give the chocolate a great sweetness and roundness with notes of cream, honey, and dried fruit. Our Chuao is single-origin, unlike other blends.

 

Chuao is a small village located in the northern coastal range of Venezuela, founded in the 16th century. The village is famous for its cacao plantations, Diablos danzantes and San Juaneras. The village is surrounded by mountains and dense rainforests to the south and the Caribbean Sea to the north.

 

There is no road access and visitors must come by boat from the town of Puerto Colombia along the coast, or by foot, crossing the mountains and the cloud forest from Turmero near Maracay.

 

The Chuao plantations has been there for over 400 years growing Criollo and hybrid varieties of

cacao. Chuao beans are of very high quality, and are considered world's finest beans, extremely rare and celebrated for their freshness. They are also the most expensive in the world.

 

The Chuao region is hemmed in by mountains which reduces contact with people and insects from other areas. Scarcely 20 tons of cocoa are available each year.

 

Experts agree that the high quality of the cacao beans of Chuao is not only because the genetic varietal that exists in the plantation but because the intense work of Chuao farmers during the pre harvest, harvest and post harvest.

 

The Chuao is exclusively a female-run company and the only organization with the right to harvest the Chuao plantation. Their farming, fermenting and drying techniques have been passed on from generation to generation and because of this the high quality of the Chuao cacao beans remains constant through the years.

 

The cacao beans are one thing. The processing is what truly defines the end product, as our Empire Chuao are small batch-roasted and refined with exceptional care. The Empire Chuao contains the least amount of sugar, with a high ratio of cocoa mass over cocoa butter.
